Skin-on Potato Wedges

Ingredients
- 450g Rooster potatoes
- 2 tbsp olive oil

Method
Copy Text1. Preheat the oven to 200° C.
2. Cut the potatoes into similar size wedges.
3. Dry the wedges with kitchen paper.
4. Place on a baking tray and drizzle with olive oil, toss to coat.
5. Sprinkle over some salt and pepper.
6. Bake in the oven for 25-30 mins or until golden and cooked through. Top with chives.
Serve to accompany any meal or simply with a cherry tomato salsa or guacamole.
