Skin-on Potato Wedges

These crispy skin-on potato wedges are a simple and delicious side. Tossed in olive oil, seasoned with sea salt and pepper, and baked to golden perfection, they're topped with fresh chives for extra flavor. Perfect with any meal or paired with salsa or guacamole.

  • 450g Rooster potatoes 
  • 2 tbsp olive oil
  • 1 tbsp chopped chives
  • Sea salt and freshly ground pepper.

1. Preheat the oven to 200° C.

2. Cut the potatoes into similar size wedges.

3. Dry the wedges with kitchen paper. 

4. Place on a baking tray and drizzle with olive oil, toss to coat.

5. Sprinkle over some salt and pepper.

6. Bake in the oven for 25-30 mins or until golden and cooked through. Top with chives. 

Serve to accompany any meal or simply with a cherry tomato salsa or guacamole.
